in the range rover the heater matrix had its own take off, which i guess was so it always had water even when the thermostat was closed?

does this extra take off serve any other purpose? or could i just block it up an use one of the rad pipes?? as i now have rad pipes runnign up under the car to the rad. also i have no thermostat now as i have an electric pump/controller.

You can block it off if you want to (provided the thermostat bypass pipe is still present between the front of the inlet manifold and the water pump inlet pipe).

i dont have the extra water inlet because i have ditched the original pump for an electric one. an theres no need for the stat bypass as there is no stat.

so i guess i can just completely block it up?

and then take pipes off the main rad hoses to feed the heater matrix?

As long as the water can circulate at all times (which it sounds like it can if you've got no 'stat), then it will be OK.
