Second coolant temp sender

Any reason why it would be a bad idea to place it here ?

I have put a sender where you have indicated and found it reads low.
This I now realise is because the coolant runs forward through the head on a RV8 and therefore gains more heat and is not the hottest at this point in the circuit. Of course, if you are fitting a custom management then you could adjust the warming up settings to suit the sender located at this point in the engine (Which I have done).
Be extra careful when tightening the manifold down as the 3/8" NTP hole will weaken the area.

Cheers Dennis, don't think there's any adjustment in the system for that, ez efi, i'll consider other options !
