so you can sell them into Itally as company cars without getting hit for lots of tax, they were turbo charged I believe. . .they also did a short stroke version with a flat plane crank and 3.7" bore.

I guess it might if you race in a class where 2.0L is the limit.
Mind you you could then probably get more power out of a modern 4 valve 2.0L 4 pot lump than a small bore 2 valve push rod V8 engine....
the only race series I can think of, historically, that comes close to a 2.0l V8 is formula 1.
Historic racing by definition has strict rules on engine size/displacement to remain as it left the factory. Reducing the size of the engine will only hinder you in that respect.
But if it was done for tax reasons fair enough. However I'm not quite convinced with that, I mean I don't see any 2l Ferrari or Lambo V8s? Was the tax thing for import on foreign cars maybe?

There were a few ferraris, and maserattis they didn't generally make it out of itally because they were pretty weird for a super car.
